Recipe idea
Eggnog tartlets with gold leaf
Put a crown onto your dessert. An absolute "must-have" for eggnog fans.
1. First, mix egg white and sugar into a meringue mixture. Use a piping nozzle to make several meringue drops.
2. Prepare a sponge cake for the base. If you like, you can add a little egg liqueur into the dough.
3. Cut circles out of the pastry using meringue rings. Use a cake edge foil and a foam ring. The foil will ensure a clean edge later on.
4. Place a first layer of sponge cake in the prepared meringue ring. Spread a light-coloured jam, such as apricot jam, on top. Place a second layer of sponge cake in the ring.
5. Pour egg liqueur on top. For that, thicken the eggnog with gelatine to create a firm layer. Place the filled meringue rings in the fridge and leave to set.
6. Just before serving, remove the ring and the foil from the dessert.
7. Decorate the dessert with the meringue drops and egg liqueur pearls. The dessert becomes even more exclusive with edible gold leaf.
