When spring comes to Mexico, around the end of September, the volcanic mountain slopes on the plateau of the Altiplano Centro begin to bloom. The colourful, fragrant splendour is also home to many bee colonies - and thus also to many bee-keepers, which are still family-based in Mexico.
Especially yellow flowers, the mozote and acahual, provide the nectar for our fine honey, but also jamarao, perilla and aceitilla are popular with the bee colonies.
The combination of these wonderful, exotic flowers gives the incomparable taste of Mexican highland honey, balanced but with a floral note.
Like any good honey, Creamy Yellow contains many ingredients that are good for us humans, whether as food or in cosmetics:
- eight different vitamins
- At least eleven minerals and trace elements (iron, copper, manganese and silicon)
- Amino acids (protein building blocks). Although these occur in small quantities, they are very diverse.
- Up to 50 flavouring substances. These are responsible for the taste and smell of the honey
- Organic acids, which come partly from the bees and partly from the bee plant
