Spelt is a fine grain and is one of the oldest grains of all. Almost forgotten for a long time, it has now been rediscovered in bakeries and pastry shops and is enjoying a comeback on our plates. And quite rightly so! This is because spelt is somewhat milder in terms of tolerance than its grain brothers and gives every pastry a special flavour.
