Recipe idea
Naked cake with chocolate raspberries
1. A sponge cake dough is suitable as a cake base.
2. For the other two different layers, prepare a raspberry puree and a mascarpone cream.
3. Season the raspberries with lemon juice and sugar and puree them with a blender. Pour the puree into a piping nozzle.
4. For the other layer, mix the mascarpone with a little milk, lemon juice and vanilla sugar until creamy. Beat the whipped cream until stiff and carefully fold it into the mascarpone cream. Also pour into a piping nozzle.
5. Now alternately layer the sponge cake base, raspberry and mascarpone cream on top of each other in a foam ring and cake edge foil.
6. Chill the towers overnight.
7. Caramelize a few sliced almonds and place this mass on the cake tower as the final layer.
8. Carefully remove ring and foil.
9. The chocolate raspberries are perfect as a crown. A little tip: A little mascarpone cream helps the pearls stay on the cake.
