Tipsy cakes with poppy seed cream
These delicious filled mini cakes are a great way to spice up your tea and coffee table. The little poppy seed dots in the cream are a visual highlight.
1. Cut the cake in half.
2. Whip the cream using cream stiffener and sweeten as desired with vanilla sugar. Mix some poppy seeds into the cream.
3. Cut an apple into thin slices. Moisten one part with a little lemon juice so that they oxidise more slowly. Briefly blanch the other part in a pan of water. This will soften the apple slices and prevent them from oxidising with oxygen.
4. Place three (non-blanched) apple slices on the bottom half of the tipsy cake.
5. Use a piping nozzle to garnish the poppy seed cream on top. Then place the other half of the cake on top of the poppy seed cream.
6. Place three blanched apple slices on top of each other and roll them up into a rose. With the help of a poppy seed cream on the top of the cake, you can place the apple rose as a topping.
7. Garnish with mint as desired.
