Chocolate cheesecake tartlets with biscuits
The cream cheese tartlet combines several opposites that fit together perfectly. Sweet and salty as well as creamy and crunchy. The perfect variety for all foodies.
1. We recommend for the bottom our Crunchy Kipferl, which create a great consistency and emphasise the sweet and salty flavour. Crumble the Crunchy Kipferl and mix the crumbs with melted butter.
2. Use a meringue ring and a cake edge foil to build easily a multi-tiered tartlet. Pour the Crunchy Kipferl Crumbs into the ring and press it down lightly.
3. For the cream, melt white chocolate and leave it to cool slightly down. Meanwhile, mix the cream cheese with sugar and vanilla extract to a creamy consistency. Next, whip cream until stiff. Stir the cream into the cream cheese mixture with the melted white chocolate. Finally, add dissolved gelatine to the mixture. This will provide strength later on.
4. Pour the chocolate cream cheese onto the Crunchy Kipferl bottom as a second layer. Leave the cakes in the fridge until the mixture has set.
5. Next, melt the sugar into caramel. Using a spoon, pour the hot caramel in lines onto baking paper and leave it to cool down.
6. Remove the ring and foil just before serving and garnish with the cashew, almond & sea salt biscuits and caramel lattice.
