How about some crispy biscuits?
If you know pumpkin seeds only from bread and rolls and cannot imagine combining the seeds with hazelnuts, this pastry speciality will persuade you otherwise. Known for his extraordinary recipes, star chef Alexander Herrmann has created crunchy biscuits with hazelnuts and pumpkin seeds exclusively for Lebkuchen-Schmidt: surprisingly different, surprisingly delicious! And by the way, due to the healthy nuts, it's a sweet snack almost without regrets...
While pumpkins and therefore also pumpkin seeds, have not been common in Europe for very long (Columbus is said to have brought them with him), hazelnuts have a history of almost ten thousand years in the diet of Europeans. There was even a time when hazelnut bushes grew almost like weeds everywhere. Of course, that was in the Stone Age...
Besides the nut, the young leaves of the hazelnut are also edible: If blanched briefly, they can be filled like vine leaves. Maybe we should also ask Alexander Herrmann for a tip about this?
Fact is, the crunchy biscuits are delicious and simply always fit, whether at the coffee table or as a snack.
