Salted caramel liqueur

1. First, mix egg white and sugar into a meringue mixture. Use a piping nozzle to make several drops of meringue.

2. Prepare a sponge cake dough and bake the dough in small, long silicone moulds. Eclair silicone moulds are best suited for this.

3. Put some sugar in a pan and allow it to melt into caramel. Pour the liquid caramel onto baking paper to form small drops. Immediately cover the caramel with another sheet of baking paper and press the drops into small circles using a rolling pin.

4. Place the white chocolate in a hot water bath until it has melted.

5. Dip one half of the eclair into the melted white chocolate. Allow the chocolate to set slightly.

6. Decorate the eclair with the meringue drops, caramel slices and salted caramel liqueur pearls. The dessert is made even more exclusive with edible gold leaf.
